Brioche French Toast

If you’re looking for a quick and simple (but also delicious) breakfast, look no further. This brioche french toast recipe is as simple as making pancakes from a box mix and will only require a bowl and a griddle or skillet to clean afterwards. Most of the ingredients you will already have on hand and it will only take you a few minutes to whisk together. This french toast is as delightful as it is easy, with soft spiced bread covered in syrup that delivers sweetness in every bite.

This recipe can be made with regular bread, but brioche goes so well with the cinnamon, nutmeg, and vanilla flavors of the french toast. But if you want to use regular bread, here’s a tip: leave the bread bag open overnight so the bread is slightly stale and therefore stiffer, so it won’t get soggy when you dunk it (since regular bread will be thinner and less dense than brioche).

If you have some leftovers, cut them into strips and freeze them for some quick and easy french toast sticks for breakfast (my toddler is a big fan)!

How to Make Brioche French Toast

This one is pretty simple. First you’ll make your dipping mixture in a wide and shallow bowl or dish, then you’ll dunk each slice of bread, soaking both sides, and throw it on the griddle/skillet until golden brown on both sides.

Note: the spices will float to the top of the dipping mixture and stick to the bread (which is what we want!) but this also means you’ll probably have to add some more cinnamon and nutmeg to the mixture every few slices of bread. At the measurements listed below, this will be enough for 1/2 – 1 whole loaf of brioche bread.

Ingredients:

  • 1/2 loaf of brioche bread
  • 2 eggs
  • 1 cup milk (any is fine, I use oat milk or almond milk)
  • 1/4 cup sugar
  • 1 tbsp. cinnamon
  • 1 tbsp. nutmeg
  • 1 tsp. vanilla extract

Instructions:

  1. In a large but shallow bowl or dish, combine eggs, milk, sugar, cinnamon, nutmeg, and vanilla extract and whisk together until combined.
  2. Heat up a griddle or skillet on medium heat and grease with some butter or cooking spray.
  3. Cook each slice of bread one by one by placing it into the bowl with your egg mixture and coating both sides. Once lightly soaked, place the slice on the griddle and heat each side for ~2 minutes or until golden brown. Do this for each slice.
  4. Top with some syrup, powdered sugar, and fruit and enjoy.
